A little Monday morning dinner inspiration - use Greek Yogurt to make a rich basil pesto linguine tonight! To make the Pesto:
- 2 cups fresh basil leaves, packed
- 1/2 cup Parmesan
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts
- garlic to taste
- Sea salt and freshly ground black pepper to taste
Blend ingredients in food processor adding oil gradually. Toss into hot linguine (whole wheat) and then top with 1 cup of greek yogurt. Mix thoroughly and serve. To make my "hubby approved", I added roasted red peppers and grilled chicken breast and chicken sausage to the mix. Bon apetit!
