Roasted carrot foil packets (WGG #5)

As a kid, we spent summers in Maine at a cabin with my mom’s side of the family for a couple of years. Some of my best childhood memories revolve around these times shared with my grandparents, cousins, aunts and uncles and parents.

One favorite memory was the night my grandpa “taught” us to make “foil packets” over the camp fire. We felt like cave people and knew our meals would be awesome. The night ended with us learning how to eat “well done” food instead and I just remember giggling while my grandpa tried to convince everyone that he was a great chef, as good as my grandma (who no one can touch! More on that later…). Dessert over the flame worked better…s’mores!

Tonight I made foil packet roasted carrots in honor of Freddie’s Fireside Disaster circa 1996. Love you grandpa :)


Make a tented foil packet and add a bit of butter and sliced fresh carrots.

Add salt and pepper (and crushed coriander) + the juice of 1/2 a lime.

Close packet securely and roast at 425 for 30 minutes.

Remove carefully from oven and eat with a healthy sprig of fresh cilantro.
